After a wonderful two-week holiday break, it is time to get back into the swing of things! For me to eat well throughout the work week, I have to plan ahead. And easy, quick and healthy meals are my weeknight go-tos. I have found several recipes that I have modified to my taste that I can throw together quickly and still have a healthy meal. This one is good! It's simple, delicious, great for lunch leftovers and can be served in a variety of ways to keep it "fresh."
One of the best parts of this meal is that I can simply thaw out a pound of my Butcher Box ground beef by putting it in the fridge the night before. Have you tried Butcher Box? Ingredients:
- 1 pound of Butcher Box ground beef
- 2-3 cloves of garlic, minced (I cheat and use the Badia minced garlic in oil)
- 1 (10 oz) can of Rotel (I choose the no salt added option)
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp onion powder
- 1/4 tsp crushed red pepper (reduce or omit to cut spice)
- 2 medium zucchini, diced
1. Brown your ground beef in a skillet with garlic.
2. Add can of Rotel and all spices and mix well. Cover, reduce heat and simmer for 10 minutes.
3. Add diced zucchini and mix well. Cover and simmer for 10 more minutes.
4. Serve!
This recipe serves 4. I like to eat it just like it is with a dollop of guacamole on top. But you could also serve it as a burrito bowl with rice (or cauliflower rice) and add salsa, guac or avocado slices and even some cheese on top. You can add drained black beans at step 2 for more protein. Add cilantro, black olives or hot peppers. Another option for serving is to use tortillas of your choice to make some tacos!
